Biscotti ****






Recipe adapted from Ms Agnes Chang ~ I Can Bake






Ingredients :




  • 3 egg white


  • 100g castor sugar


  • 120g plain flour


  • 120g whole unblanched almonds




Method :






  1. Whisk egg white until light and fluffy. Slowly add in sugar and continue to whisk until stiff.




  2. Fold flour and almonds lightly into the mixture.




  3. Prepare a 20cm x 10cm loaf tin, line it with baking paper and pour in the mixture. Bake in a pre-heated oven at 180c for 30-35 mins till cooked and lightly brown. Remore and leaveto cool. Cover the loaf and chill it in the fridge for 1-2 days.




  4. Use a very sharp knife and cut it into thin slices. Arrange onto a baking tray lined with greased proof paper and bake in an oven at 130c for about 45 mins to 1 hour, till very dry and crisp.




  5. Leave to cool before storing.

Butter Cookies

Recipe adapted from Agnes Chang ~ " Baking Made Easy "


Ingredients A :


  • 150g butter

  • 100g castor sugar

  • 1 tbsp condensed milk

  • 1 egg yolk

  • 1/2 tsp vanilla


Ingredients B (sifted together) :


  • 200g plain flour

  • 50g cornflour

  • 1/8 tsp salt

  • some crushed cornflakes or Nestum


Method :


  1. Cream butter and castor sugat till light and fluffy. Add condensed milk and egg yolk. Mix well. Add vanilla.

  2. Fold in the sifted flour and mix into a soft dough.

  3. Spoon dough onto the Nestum and shape into balls. Place onto agreased baking sheet.

  4. Bake in a pre-heated oven at 180C till golden brown. Cool and store in air-tight tin.

A:牛油 250g 、糖粉 80g
B:马铃薯粉 250g、面粉 100g(我用特幼粉)、罂粟子 少许(我没放)


1. 把牛油和过筛的糖粉用搅拌机搅匀。
2. 加入马铃薯粉, 面粉和罂粟子拌匀成面团。
3. 把面团揉成小粒, 再用叉稍微压扁。
4. 放进预热170'C 的烤箱烤15-20 分钟。

奶油芝士饼 Cream Cheese Cookies


食谱参考自QiQi

奶油芝士饼干Cream Cheese Cookies

材料:
牛油butter~ 100g,室温软化
奶油芝士cream cheese~ 45g,室温软化
糖sugar~ 40g,(嗜甜的话,可以增加10g)
蛋黄egg yolk~1/2pcs
香草精vanilla extract~ 1/8tsp

粉料:
面粉all-purpose flour ~1.25杯 约125g
泡打粉baking powder~ 1/4tsp
以上粉料混合后搅拌均匀

做法:
1) 把室温软化的牛油,奶油芝士,加糖混合后用手动搅拌器打发成羽毛状;
2) 加鸡蛋和香草精,搅拌均匀;
3) 加入粉料,用橡皮刀拌成面团;
4) 用挤花袋把面团挤在烤盘上,饼干之间留些许距离。
5) 烤箱预热140°,烤20分钟。(温度视个人烤箱)贴士:芝士的量可以根据口味略微调整。

山楂圆饼 Haw Flakes Cookies


食谱参考自人生加油站的annann
材料A:
牛油 ~ 150g
糖粉 ~ 50g
蛋白 ~ 1 粒 (约36g)
材料B:
普通面粉 ~ 160g(筛过)
粟粉 ~ 80g(筛过)
山楂饼 ~ 6小包 (用手弄碎)

做法:
1。 材料A用搅拌机中速度打至幼滑。(约5分钟)
2。 加入材料B用汤匙拌成软团。
3。 将面团分秤成每份6g,揉圆排放在已抹上油的烤盘里。
4。 再用条纹棒压扁。
5。 以150度烘15分钟或熟,取出待凉即可收入不透风罐子。
