Biscotti ****
Ingredients :
- 3 egg white
- 100g castor sugar
- 120g plain flour
- 120g whole unblanched almonds
Method :
- Whisk egg white until light and fluffy. Slowly add in sugar and continue to whisk until stiff.
- Fold flour and almonds lightly into the mixture.
- Prepare a 20cm x 10cm loaf tin, line it with baking paper and pour in the mixture. Bake in a pre-heated oven at 180c for 30-35 mins till cooked and lightly brown. Remore and leaveto cool. Cover the loaf and chill it in the fridge for 1-2 days.
- Use a very sharp knife and cut it into thin slices. Arrange onto a baking tray lined with greased proof paper and bake in an oven at 130c for about 45 mins to 1 hour, till very dry and crisp.
- Leave to cool before storing.

德囯酥饼 German Crunch ~ Green Tea & Chocolate
Ingredients A :
- 150g butter
- 100g castor sugar
- 1 tbsp condensed milk
- 1 egg yolk
- 1/2 tsp vanilla
Ingredients B (sifted together) :
- 200g plain flour
- 50g cornflour
- 1/8 tsp salt
- some crushed cornflakes or Nestum
Method :
- Cream butter and castor sugat till light and fluffy. Add condensed milk and egg yolk. Mix well. Add vanilla.
- Fold in the sifted flour and mix into a soft dough.
- Spoon dough onto the Nestum and shape into balls. Place onto agreased baking sheet.
- Bake in a pre-heated oven at 180C till golden brown. Cool and store in air-tight tin.

奶油芝士饼 Cream Cheese Cookies
食谱参考自QiQi。
奶油芝士饼干Cream Cheese Cookies
材料:
牛油butter~ 100g,室温软化
奶油芝士cream cheese~ 45g,室温软化
糖sugar~ 40g,(嗜甜的话,可以增加10g)
蛋黄egg yolk~1/2pcs
香草精vanilla extract~ 1/8tsp
粉料:
面粉all-purpose flour ~1.25杯 约125g
泡打粉baking powder~ 1/4tsp
以上粉料混合后搅拌均匀
做法:
1) 把室温软化的牛油,奶油芝士,加糖混合后用手动搅拌器打发成羽毛状;
2) 加鸡蛋和香草精,搅拌均匀;
3) 加入粉料,用橡皮刀拌成面团;
4) 用挤花袋把面团挤在烤盘上,饼干之间留些许距离。
5) 烤箱预热140°,烤20分钟。(温度视个人烤箱)贴士:芝士的量可以根据口味略微调整。

牛油 ~ 150g
糖粉 ~ 50g
蛋白 ~ 1 粒 (约36g)
材料B:
普通面粉 ~ 160g(筛过)
粟粉 ~ 80g(筛过)
山楂饼 ~ 6小包 (用手弄碎)

糖粉 ~ 50g
蛋白 ~ 1 粒 (约36g)
材料B:
普通面粉 ~ 160g(筛过)
粟粉 ~ 80g(筛过)
山楂饼 ~ 6小包 (用手弄碎)
做法:
1。 材料A用搅拌机中速度打至幼滑。(约5分钟)
2。 加入材料B用汤匙拌成软团。
3。 将面团分秤成每份6g,揉圆排放在已抹上油的烤盘里。
4。 再用条纹棒压扁。
5。 以150度烘15分钟或熟,取出待凉即可收入不透风罐子。
